Pucuk Paku Masak Lemak Tempoyak Cili Api

Hazimah NS Kitchen?? I dont think so lah Farie...paku tempoyak...senang aje.. you just need santan pekat, kunyit and chili tumbuk halus then you cook the santan with the daun paku, slow fire and put some ikan bilis and some tempoyak. Slow fire and with stirring so that tak pecah minyak.and finally befor you angkat put maybe 2 pieces of asam keping and it is ready to served.

Ikan Masak Asam Pedas

This menu makes enough for 4 people for 2 meals (lunch & dinner).
You need to drink lots of water when you eat this dish.
Those who are migraine-prone will need to drink more water than the normal person.
The MSG is packed into the chili paste.... that makes this dish very nice!

Ingredients
Dory filet (1/2kg; Mydin sells 1 pkg = 1kg; use half of pkg contents)
1 packet perencah Ikan Bakar Adabi /fish chili paste (not Nasi Goreng paste; has MSG)
2 daun limau purut (kaffir lime leaves?)
2 batang serai (2 stalks lemon grass; can use frozen ones)
1/2 yellow onion
hot water
up to 2 teasp salt (masin sgt ni; 1.5 teasp pun dah masin)
1-2 tabsp cooking oil (ikan dory ni pun dah banyak lemak mcm ikan patin)
~1 bowl hot water (utk kuah; cair sgt tak sedap; do not use cold water, tak jadi)
1 small piece asam keping (not asam Jawa; cut the asam keping if it is too big)
1 long red chilli

Utensils
kuali
wooden spoon (senduk kayu sebab ni asam; klu guna senduk besi nanti rasa besi)

Method
Thaw dory filet and while still firm, cut into 2"x2" squares or bite-pieces.
Dice yellow onion but not too thinly.
Heat kuali, add oil and fry onions.
When onions are brown, add chili paste, stir and when fragrant, add hot water.
Add cut pieces of dory fillet. Stir to submerge all fish pieces.
Add asam keping.
Add salt to taste.
Let mixture boil until fish is done (15 min cukuplah sebab ikan ni isi nipis)
Cut red chilli lengthwise into 4 pieces and add to mixture.
Serve while still steaming hot, with freshly cooked rice.

These are frozen red chilies. Use only ONE red chili 

1 packet is 1kg (RM4.60)... use half the contents to try first 

This is frozen fish fillet and not chicken! Let it thaw on the sink top. 

Finished product if you are patient ... eat quickly before it's gone!

Apple cake

Ingredients
2-3 Granny Smith apples (green apples) = makes 2 cups of diced apple (chunks)
1 cup sugar (or ½ cup if you don't like it sweet)
½ cup butter/margarine or cooking oil
1 egg
1 cup flour (use plain flour here if adding baking soda)
¾ tsp. baking soda (omit this if using self-raising flour)
½ tsp. salt
½ - 1 tsp. cinnamon
1tsp. vanilla
additional oil for greasing baking tray
additional flour for dusting tray

Guide
tsp = teaspoon (sudu teh, sudu kecil)
tabsp = tablespoon (sudu makan, sudu besar)

Utensils
Wooden spoon
Baking tray
Cup (use the same cup for measuring all ingredients)

Method 1
Preheat oven to 375.
Grease a 9" or 10" round pan with cooking oil, butter or margarine
Sprinkle diced apples with the sugar, set aside.
In a small bowl, mix the flour, baking soda, salt, and cinnamon.
In another bowl, beat the egg.
Mix in the oil and vanilla.
Stir the flour mixture into the egg mixture, until well mixed.
Add apples.
Spread batter into prepared pan.
Bake for 35 minutes.

Method 2 
Wash and cut green apples into big chunks (leave skin on and dice, potong kiub)
Beat sugar & butter/margarine in a bowl till all sugar is dissolved
Add eggs and stir to mix, add vanilla and cinnamon
Add apple chunks and stir to mix

Grease tray with butter/margarine/cooking oil (use your finger to rub the oil in)
Pour cake mixture into baking tray and spread evenly
Bake at 350F until top of cake is golden (not burnt/black)

Poke cake with a wooden skewer (lidi satay) to test if it is done
When done (no cake mixture sticks to skewer), remove cake from oven
Serve warm with/without pudding sauce or ice-cream

Hailam French Toast

Ingredients
1 loaf of cut Hailam bread
5 eggs
half of a small white onion
water
fine salt
powdered pepper
cooking oil

Method
Wash eggs and beat in a shallow Pyrex bowl
Mix salt & water in a tablespoon and add to beaten eggs
Add pepper
Slice onion thinly and add to seasoned beaten eggs


Beaten eggs, seasoned and with added onions 

Cut Hailam bread pieces into halves

Cut Hailam bread 


Heat up a heavy non-stick skillet (kuali leper)
Add cooking oil to skillet and sway skillet to spread oil to a thin layer
Dip each piece of bread in beaten seasoned eggs with onions and place in skillet
Brown each side before flipping over


Remove bread pieces when both sides are brown and crispy

Serve hot with chicken curry or strawberry jam
